Zucchini Brownies

Here’s a recipe that sounds weird I know.. I thought the same exact thing,but it’s a good way to sneak those vegetables in!:) I really didn’t think they would come out as good as they did. Now I used two 8×8 pans instead of a 13×9 so my brownies seemed to be more fluffy like cake. They might actually come out that way,but either way they were good. Next time I want to try and find something to take place of the sugar and possibly use the 13×9 pan so that they are thinner and more crunchy around the edges!Image

Ingredients

1/2 cup applesauce
2 small or medium bananas mashed
1 1/2 cup sugar
2 tsp. vanilla extract
1/2 cup cocoa powder
1 1/2 tsp. baking soda
1/2 tsp salt
2 cups finely shredded zucchini
2 cups all purpose flour
1/2 cup walnut pieces

Preheat oven to 350 degrees F. Grease and flour an 9×13 inch baking pan.
In a large bowl, mix together the applesauce, mashed bananas and sugar. Add vanilla and cocoa and mix together. Then add baking soda, salt, and zucchini and mix together. Add flour and walnuts and mix together. Spread evenly into a prepared pan. Bake for 25 minutes until brownies spring back when gently touched.
Preheat your Oven to 350 degrees

I used coconut oil to grease my pan. It worked great! I wanted to try my best to keep it as healthy as I could!

 I mashed my bananas & shredded my zucchini. I will be using leftover zucchini for Tacos tomorrow! 2 zucchinis was a little much for the brownies.

Mixed the bananas,applesauce,and sugar together!(any tips on a sugar substitute?)

Added the vanilla and cocoa powder( Here you go chocolate lovers! Especially for me!)

Add Salt,Baking Soda,and Shredded Zucchini…See can’t even see it!!

Add Walnuts & Flour.. It becomes thick! No worries it bakes just fine.

25 minutes later! Let cool then cut & enjoy!

Looks yummy doesn’t it? This is why I say use the 13×9 pan, i’m guessing they wouldn’t be as thick as this. Less cake like and more like brownies. They are still very delicious! So my next try, I plan to use the 13×9 pan & look for a sugar substitute! Go and try it! You will LOVE it because it’s not too sweet but very delicious!

Strawberry Poppyseed and Bacon Salad

Here is my first Pinterest Recipe.This is such a yummy salad with great flavor! My husband isn’t a fan of a salad with fruit,but I guess it’s true what they say,“Everything is better with bacon!”

Ingredients needed:

  • 6 cups chopped romaine lettuce
  • 2 cups strawberries, chopped
  • 8 strips bacon, cooked and crumbled
  • ½ red onion, diced
  • 1 cup crumbled feta cheese
dressing
  • 1 teaspoon garlic, minced
  • 1 teaspoon diced red onion
  • ⅓ cup sugar
  • ⅓ cup white vinegar
  • ¼ cup strawberries, chopped
  • ½ cup olive oil
  • ¼ teaspoon salt
  • 1 tablespoons poppyseeds

Begin by cooking your bacon, I used Turkey Bacon. Be careful don’t get popped by hot grease!! Add your crumbled Feta cheese and crushed Bacon bits on top of your bed of Romaine Lettuce. Begin chopping your red onions & strawberries for your salad and dressing.

Prepare your Strawberries by washing them! Chop Chop Chop,Strawberries and some red onion! Measure out all your Dressing ingredients and process it through a small processor or bullet until smooth.
